Ingredients

  • 15- ounce can chickpeas
  • 1/4 cup tahini
  • 1/4 cup maple syrup or agave syrup to taste
  • 1/2 cup cocoa powder Dutch process or dark chocolate, if desired
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt

Instructions

  • Drain the chickpeas into a glass measuring cup, reserving the liquid aquafaba.
  • To the bowl of a food processor, add the chickpeas, tahini, maple or agave syrup, cocoa powder, vanilla, kosher salt, and 2 tablespoons of the reserved water from the chickpea can (aquafaba).
  • Puree for 30 seconds, then scrape down the bowl.
  • Taste the hummus. Add more syrup if you feel it is necessary.
  • Add additional aquafaba or water if you need to, continuing to puree until the hummus comes to a perfectly creamy consistency.
  • Add hummus to a bowl and serve with fruit, graham crackers, pretzels and any other preferred items.

Notes

  • You can use regular water if you prefer it to the chickpea water (aquafaba)
  • Store refrigerated for 7 to 10 days.
  • Serve with pretzels (gluten-free if desired), green apple slices, and strawberries.
